Unlike many other plant-based proteins, soya beans are a complete protein so they often form a key part of vegetarian and vegan diets. Their abundant fiber supports digestive health, while they also supply important vitamins and minerals such as vitamin K1, folate, copper, manganese, phosphorus, and thiamine.
Soybeans are rich in plant compounds that could contribute to reducing the risk of breast and prostate cancer. Additionally, they may help ease menopause symptoms and support bone health in postmenopausal women by lowering the chance of osteoporosis.
How to cook
Generally: Soak for 8-12 hours or overnight. Put soaked beans into a pan, cover and bring to a boil and cook vigorously for 1 hour or until tender, add more liquid during cooking if necessary. Cool and serve.
To make soya milk: Soak for at least 10 hours before liquidising into a paste using a blender (using 10 cups of water to every cup of soya beans). Optionally, cook the mixture in a pan for 30 minutes. Strain through a cheesecloth and add sugar to taste.
Storage: Cool, dry & hygienic; away from direct light & strong odours.
