Fregola (italian for "crumb) is a semolina pasta from Sardinia that looks like toasted breadcrumbs or large pearls of couscous.

It has a flavour of a nutty, toasted pasta which makes it a satisfying main ingredient in a pasta salad or as a side dish to seafood, perfect for tasty summer dishes

How to use:

Bring 4 cups water with a pinch of salt to the boil and add 1 cup fregola. Cook for 8-10 minutes until al dente. For a hearty flavour, use chicken or vegetable stock for some or all of the cooking liquid.

Fregola works beautifully with a small drizzle of olive oil, grated pecorino cheese, and diced parsley.
